In 2020 we opened the first plant-based sushi restaurant in the Netherlands, built on a simple belief: sushi is about craft, not catch. Respect for the ingredients, the seasons, and the balance of taste, texture and presentation — everything else is habit.
Three restaurants later, the mission hasn't changed: more fish in the sea, better sushi on your plate.
